Delicious lemon curd (quick and easy)

In this blog post and adjoined video I´ll be showing you how to make delicious lemon curd, perfect for spreading on a piece of toast or you could use it as the filling for some luscious lemon tarts or a lovely lemon meringue pie.

But now let´s get stuck in. If you´ve never made lemon curd before then you have to try this because it´s really quick and easy and so much tastier than anything you can buy.

And for my Spanish friends who can´t find this in the shops well I´m sure you´ll absolutely love it once you try it.

So let´s get to it. In the video that accompanies this post I´ve got a very special guest pair of hands helping me out that belong to my darling daughter.  A budding You Tuber in the making, she loves baking and cooking so it´s a pleasure for me to have her in the kitchen with me.

Mums and dads everywhere I highly recommend getting in the kitchen with your kids. It´s a great chance to share some creative fun with them and you´ve got the added bonus of having something delicious to eat at the end of it. So it´s win, win.

Alright so for this lemon curd recipe we used three lemons, because they were big ones fresh off the tree, but I´d use four if there not big ones.

We also used four large eggs, a hundred grams of butter and 150 grams of sugar.

Okay, so the first thing you need to do is to break the eggs into a bowl and then give them a good whisk. 

After that, you need to chop the butter into little pieces.

And then we need to get the zest off of the lemons. Now we only want to get a little bit of the yellow zest. You don’t want to get the white stuff because that can taste quite bitter. 

So I showed her how to do one and then I let her get on with it. 

Okay, so once that’s done, chop your lemons in half and get the juice out of them. 

Measure out approximately 150 grams of sugar, then we need to get a pan of gently boiling water and stick a bowl over the top of that (bay Marie).

And it’s in with the lemon juice, the lemon zest and the butter and that needs a good stir. Also add the sugar as well and stir until everything is dissolved. 

Then it’s in with the eggs, and now we start with the “gentle” stirring in a nice figure of eight. 

And we need to do that for about 15 minutes. By which time you’ll find that the mixture will coat the back of your wooden spoon. 

Then we pour it into our containers. We might need to get a little bit more help from another set of fingers to help us clean the bowl out. 

Once it’s cooled down at room temperature, get a lid on it and stick it in the fridge. 

And that will keep in there for a week or two, if it lasts that long. 

So there it is, zesty, tangy and super tasty lemon curd. Slap it on a piece of toast and enjoy!

Please consume responsibly and don´t be greedy as it does contain quite a lot of sugar.
